1)  Quick Breakfast- No Grease Omelet for One

  • Two eggs or equivalent amount of Low Cholesterol egg substitute.
  • Omelet filling, ham, sausage, salsa, or almost any leftover, one to two tablespoons.
  • One teaspoon milk or water

Beat eggs, milk or water in a micro-wave capable bowl or saucer, add omelet filling and stir.
Microwave on high until all liquid is gone, about two minutes. This makes a great sandwich on a bun
or roll. Size the bowl or plate to the roll size. Turn the omelet onto the sandwich roll. Add salt, pepper
or salsa and cheese  to taste.
2)  Low fat, no-fry Chiliquilles, no salt.
  • One  stack of stale tortillas.
Cut the stacked tortillas into quarters. Preheat oven to 350 deg F. to 400 deg. F. Place the tortilla
pieces, separated individually,  into a large baking pan or cookie sheet. Bake until light brown.
Remove the pan from the oven,stir the tortilla pieces. Return to the oven and bake until desired shade
of brown is achieved. They should look like restaurant white corn chips.
Chiliquillas can be served as snacks with salsa or may be layered with enchilada sauce and onions,
olives, mushrooms, cheese and / or meat. Just add whatever you like.
They make a great taco salad ingredient. Or serve them as garnish with beans.
3) Lean Pork and Beans
  • 1 1/2 cups Navy Beans (Alubia in Mexico)
  • 1 small can or carton of tomato sauce. Or use three Roma (Bola) tomatoes pureed in blender.
  • Two tablespoons of brown sugar or pulverized Peloncillo.
  • 1/2 Teaspoon salt
  • One jalapeño pepper, halved and seeded .
  • 1/2 cup lean pork shoulder (pierna) de-boned and cubed.
  • 1/3 White or yellow onion, chopped fine.
  • Boiling water, enough to cover beans with three inches of water.
Spread beans on a clean platter and discard any foreign matter, rock chips, leaves or stems. Rinse
beans and jalapeño pepper thoroughly. Place beans in an electric crock pot. Rinse tomatoes before
pureeing  in blender. Add all other ingredients. Add boiling water and turn the crock pot on high. When
pot begins to boil, set heat to low and cook all day or over night.

These are great with any meal. For breakfast, take one egg, either beaten or whole, and place on a
bowl of cold beans. Cover with a paper towel and microwave on high for three minutes or until egg is
cooked.
